Promoting research-based best practices for preventing foodborne illness from microgreens
Project goals
The long-term goal of this Collaborative Education and Training Project is to decrease potential food safety risks related to the production and distribution of microgreens. Microgreens operations are more likely to implement recommended practices customized to meet their specific needs as opposed to generic produce safety recommendations.
About the research
Kristen Gibson, PhD, professor of food safety and microbiology and director of the Center for Fod Safety at the University of Arkansas, leads a team developing microgreen training materials, funded by USDA-NIFA and informed by research to understand possible food-safety risks associated with microgreen production.
